Kitchen Time

Today I had a friend cancel on socializing (thankfully, as I have no wish to catch anybody's illness). T'other calendar item turned out to be a time-keeping error on my part. March 8, not February 8. Heh. Oops.
Thank goodness! Now I've got plenty of time to write a eulogy for a friend's youthful optimism aka 40th bday, learn how to make a good Hot Pot dish (ideally low-sodium and low-fat, so Campbell's Cream of Anything soup won't cut it as an ingredient), and decide upon my most dramatic funeral finest. *rubs hands in glee at projects to come* Yeah, my life is my art.
I have the entire afternoon and evening free. OMG it feels amazing. I've got homemade chicken stock (no-salt), some leftover roast chicken, a couple chicken breasts I've seasoned w/paprikas (sweet & smoked), ground black pepper, rubbed sage, and garlic powder which I'll bake once the oven's preheated then shred or chop once cool, an assortment of veggies (fresh & frozen), and pearled barley. There will be soup for supper and leftovers, including some to freeze for down the line when I don't feel like cooking.
I began cutting up crudites for SuperbOwl Sunday out of a sense of "I gotta do this," but soon began enjoying myself. I find myself smiling, thinking about one particular Dear Friend with whom I've spent a lot of time in the kitchen, watching and/or sous-chef'ing for whatever delights were being whipped up for us. I feel closer for spending more time in the kitchen recently, even as I hope to benefit as well from cooking and eating decently.
Now listening to music and finishing up this post. I'm cooking (preheating the oven counts), and doing laundry (one of the best chores from which to gain a feeling of accomplishment for basically waiting around ;-) Feeling fine.
