We've Come A Long Way (Baby)
Apr. 4th, 2009 07:42 amMeatloaf's a good way of using up limp celery, rubbery carrots, an unfully-cooked sweet potato, whatEVER random veggies past their prime you find living in the crisper. It ends up on the dinner menu every 3-6 weeks or so, when the time rolls around to deal w/the fridge leftovers in a serious way and you don't wanna make Whatchagot Stew. One such exercise a couple of months back didn't go so well. It was/felt/seemed much better once I accepted that it wasn't actually Meat Loaf but instead Meat Lump. Last night, however, we worked wonders and created a mega-tasty MeatLoaf Masterpiece. YUM!
And then came the Citrus MeatLoaf. There was left behind citrus - desiccated hard lumps o' grapefruit hiding in a shelf in the pantry, a handful of little wizened tangerines, a lonely lemon. We squoze 'em and chucked 'em into a tall glass w/lumps of ice and rum and it was GOOD.
